-Chicken
-1 Tbsp. olive oil
-1 small onion
-3 tsp. curry powder
-1/2 cup chicken broth
-1 rounded tsp. tomato puree
-juice of 1/2 lemon
-2 Tbsp. apricot jam
-3 Tbsp. cream
-1 cup mayonnaise
-Grapes (optional)
Instructions:
1. Cook chicken for 30 min. at 400. Let cool.
2. Heat oil in a saucepan, add onion. Fry gently for 5 min.
3. Stir in stock, tomato puree, lemon juice, and jam.
4. Bring to a boil, then simmer for 5 minutes.
5. Remove from heat, strain, and cool.
6. When cool stir in mayo and cream.
