Maple-Mustard Pork Chops with Apples

Ingredients:

- 1/2 cup maple syrup
- 1/4 cup brown mustard
- 1/4 apple cider - 1 large shallot
- 1/2 tsp. allspice
- 1 tsp. cumin
- 4 1-in. thick boneless pork chops
- Olive oil
- Salt and Pepper
- 1 or 2 apples, sliced 1/2 in. thick (I prefer Fuji)

Instructions:

1. Preheat pan over medium high heat and oven to 350.
2. Slice apples into 1/2 in. slices. 2. Combine syrup, mustard, cider, onion, allspice, and cumin in small saucepan and cook over medium heat for 5 minutes.
3. Coat chops in oil, then season with salt and pepper.
4. Saute chops 3 minutes each side.
5. Baste chops with 1/2 sauce, saute another 3 minutes.
6. Pour remaining sauce over chops, add apples to pan, put into the oven for 10-12 minutes.
7. Put slices of apple over chops to serve, pour sauce over them both.
