- 1 cup softened unsalted butter
- 3/4 cup sugar, plus extra for sprinkling
- 1 Tbsp lemon juice
- 1 1/2 Tbsp poppyseeds
- 1/2 tsp almond extract
- 3 large eggs
- 1 1/3 cups self-rising flour
- 1/2 cup all-purpose flour
9x5" buttered and floured loaf pan
Instructions:
1. Preheat oven to 350
2. Cream butter and 3/4 cup sugar
3. Add eggs one at a time with 1 Tbsp flour for each
4. Gently mix in the rest of the flour
5. Add lemon juice, poppyseeds and almond extract
6. Pour batter into the pan and sprinkle top with sugar
7. Bake for 1 hour or until a cake tester comes out clean
8. Let cool in pan on a wire rack
