Instructions:
1. Grease and flour two 8x4" pans. Preheat oven to 325
2. Sift flour, salt, baking powder, soda, cinnamon, and nutmeg
3. Beat eggs, oil, applesauce, vanilla, and sugar.
4. Add the dry ingredients, zucchini and nuts to the egg mixture.
5. Pour into prepared pans.
6. Bake for about 60 minutes, until a cake tester comes out clean.
7. Cool in pan on rack for 20 minutes, then remove from pan.
